Canyon Cookout: Nichols’ Buttermilk Pancakes

Chemistry meets cooking dive into a pancake recipe that is guaranteed to be the catalyst for a great breakfast

Breakfast is often regarded as one of the most important meals in the day, we explored recipes, settling on a recipe that belongs to Jeffery Nichols. Explore with us this simple recipe, that utilizes a chemical reaction to make perfectly fluffy pancakes.

 

Ingredients:

2 eggs (Separated)

2 cups of buttermilk

1.5 cups of flour

1/4 teaspoon salt

1 teaspoon sodium bicarbonate

Instructions:

1.5 cups flour + 1/4 tsp salt.  Mix and set aside.  

2 cups buttermilk + 1 tsp sodium bicarbonate. Mix and let sit.  It will bubble 

Separate egg whites into a bowl, and place egg yolks in the bowl with the buttermilk.

Whisk egg whites with an electric mixer until peaks remain.  

Slowly add liquids to solids and mix to keep smooth.  

Fold in the whipped egg whites.

Place in the fridge for 15 minutes.  

Turn the griddle onto 4oo.  let it get hot.  

Using a 1/4 cup scoop batter onto the griddle and let cook until multiple bubbles have broken on the surface.  Flip and let the other side cook.  Pancakes should be a nice golden brown.  

Add milk chocolate chips to the batter if desired to make chocolate chip pancakes. 

Review:

The pancakes were perfectly, quite frankly neither I or Evan were expecting such a sound pancake recipe. It has all the qualities of a pancake, it provides both an incredibly fluffy texture and a warm savory-sweet flavor. The outside is crispy, a perfect golden brown, providing a incredible platform of maple syrup.

Jackson gave it five out of five stars, citing it’s impeccable flavor, providing the ideal pancake experience in a format that had never been experienced before.

Evan gave it five out of five stars, emphasizing the overall size of the pancake, in reference to how fluffy the pancakes had gotten from both the chemical reaction and cooking process.
